This took about three hours from start to sit down – but it was really delicious – I’ve never made chicken this way (pounded thin with a mallet) and it is so deliciously tender – it earned 4 out of 5 stars so that’s always a good thing!
This was a yummy recipe! I went to an honest to God’s butcher shop to make sure i had the right kind and best quality i could have! much to my delight – the mean was a dollar less a pound there – so I was very happy about that! The butcher shop reminded me of Alexander’s Market in Lincoln – which isnt even there any more – but i went to many times as a kid with my mom and grandma a few times too, i think! I will definitely be shopping there (Humphrey’s Market) more often!

Yesterday I made Drip Beef – it was very yummy! The recipe on her website tho, was different than the one i used – i used the one from her cookbook… but either way you try it – you wont be sorry 🙂 I will definitely make it again! I started with this DELICIOUS looking roast… salted and peppered
seared it on both sides, in 2 T of butter and 2 T of canola oil, added rosemary, and two cups of beef broth and one cup of water…then a small jar of pepperoncinis
then simmered it for 5 hours on low….
in the meantime – i decided to try out my new mandolin – so i sliced up about 4 potatoes and fried them up (also got the idea from PW – who else? lol)
seriously – dont these look completely delicious?

I was pretty happy with the results. And so was Wyatt 🙂 which is the most important factor – he gave it 4 out of 5 stars 🙂

Week three I made PW’s sloppy joes…and something extra this week – I made a dessert – pots du creme – WITH home made whipped creme – and YES it WAS a delicious as it sounds! I am really loving this challenge – I really really am enjoying the cooking! my scale isn’t as appreciative of my new hobby but – c’est las vie! Next up is drip beef – as a side I’m going to attempt home made potato chips – yummm – have a great day!
Yesterday I made the three meat lasagna. It was REALLY good but also VERY filling! Just look at this heavy skillet full-o-meat!
Although it has a lovely heat/bite to it – i might cut down on the red pepper flakes by half next time i make it – and there will be a next time! Yummo! Look how beautifully it came out:
All in all i think it was so easy – it took a while to put it together, but there was nothing complicated about this recipe at all.
Needless to say – it was a good way to stay busy until my phone call from my son came in 🙂 I Hope these next 80 days go by really fast! I miss him so much. I hate not being able to talk to him. But all at the same time I’m so incredibly proud. This emotional roller coaster is taking a toll on me I’m afraid! I’m just exhausted.

Last Sunday I started my “13 weeks of Sunday Dinners” plan (trying to help pass some time till my son gets home from basic!) and here is the first recipe i created – it was (my very favorite) The Pioneer Woman’s recipe for Spicy Whisky BBQ sliders. They turned out great! Here is a photo of mine 🙂
Next Sunday is Three Meat Lasagna – i cant wait to try it 🙂

Welcome back to me! I used to write off and on, on a different blog site… and I’ve decided that I miss it. Its been since December of 2012 since I’ve written anything…. and since its a new year – my resolution is to try to find more things about the old me that make me… ME… if that makes any sense.
