Week 13

Since our plans got bumped back a bit, I postponed the last two Sundays but am back on track 🙂  I have only two recipes left after this one!  Crazy to think of it that way! I’m SO HAPPY he is almost home!

This week was PW’s Ranch Style Chicken.  SUCCESS! I have finally found the recipe that Wyatt gave 5 stars for!! First I have to mention this recipe doesnt actually have anything ranch-flavored in it – but it is WONDERFUL and takes a little prep time but COMPLETELY WORTH IT!!

Here is everything you’ll need:

honey, dijon mustard, red pepper flakes, paprika, salt and pepper, and fresh lemon juice.  Oops and a package of shredded sharp cheddar cheese. which i forgot. and had to go to the store for while this was marinading.

whisk 1/2 cup of honey and mustard together. add juice of 1/2 lemon. (i will say i cut this back – recipe calls for 6 chicken breasts, then cut them in half.  I bought four – already cut in half pieces since it was just Wyatt and me – so i divided everything in half)

after everything is combined – then add paprika, salt, pepper (1/2 teaspoon of each) and red pepper flakes (to taste – a little goes a LONG way i think 🙂  )

after its all mixed – add chicken, cover and let marinate for 2 – 4 hours ( i did for four hours) let me tell you – this is SOOOO delicious and worth it!)

while its marinading- cook 1/2 pound of bacon, slices cut in half. drain. set aside.

after chicken has had time to soak up all the marinade-y goodness – i put it on my foreman grill for 5 minutes.  then placed cooked chicken on a foll-covered baking sheet.  top the chicken with four half-strips of bacon each (or less if you want).  Cover with shredded sharp cheddar cheese.  place under broiler in the about 5 minutes – or until cheese is melted.

the flavor of the marinade with this tender chicken was OUT OF THIS WORLD delicious!!  I served it with mashed potatoes.  Wyatt had his plate cleaned about 3 minutes later.  This is how I judge my success!

and as for Week 12 – well – I confess – I didnt cook anything special – Wyatt was working until 8:00 and I was just worn out from the week and the roller coaster of emotions I cant seem to get off of!  So I took the Sunday off. 🙂

 

Week 10 Honey Plum Soy Chicken

I’m having a lot of fun cooking through my Sundays until Dylan comes home – just nice to try different things – with familiar flavors – but still different!  This was pretty easy too – with a delicious flavor 🙂  I added some store-bought frozen rolls – baked up and brushed with butter and lightly salted.  Delicious!

Week 9 – Tangy Tomato Brisket

Standard

This was very delicious – but a little salty.  I talked over with the butcher what i was making – and since I had never cooked with brisket before – he suggested i go with a package of – not brined, but something akin to brine – brisket.  It was good – but I almost feel like it was a little too salty – I loved how easy this recipe was tho!! It made a LOT and had a good flavor!  I made some delicious potatoes as a side dish and they were AWESOME.  Very easy and I will for sure be making those again too!

Week 8

Standard

I’m pretty far behind in postings – been kinda crazy – not in a good way at first! But things are leveling out…  the sunday i made this, it ended up getting overcooked – not burnt – but just shy of it I think… i am planning to redo it – it was very flavorful – i think i just need to keep a closeblog 003r eye on it next time!   blog 004

Week 7: BBQ Chicken Pineapple Quesadillas

This week i made bbq grilled chicken and pineapple quesadillas. This is probably the quickest meal I’ve put together over this Sunday Dinner Experiment – probably less than 30 min! Also I cheated with a an of crushed pineapple instead of real pineapple – very easy and delicious!

Start with two chicken breasts…

and, due to the temperatures – i used the INDOOR grill 🙂

after grilling i brushed them with bbq sauce…

and cut them into strips…

next i sliced up a jalepeno pepper…

then melted a tablespoon of butter in my skillet…

…then built my quesadilla using the chicken, jalepeno, cheese and pineapple (her reciple called for fresh pineapple…i cheated with a can of crushed pineapple…shhhh dont tell her!)

then carefully placed it in the skillet – topped with another tortilla…cooked on one side for about three minutes, flipped (carefully) and cooked about two minutes on the other side…. and voila! delicious!

I’m not just a (wannabe) cook

I also love reading – I love to talk to other people about what they’re reading too! Right now I’m reading “there’s more to life thank this” and I’m loving it. I am always interest in contact from the spiritual world – tho most don’t believe in it – I’ve had three experiences in my lifetime. I really recommend this book! Open yourself up to it and you might be surprised 🙂 if you hav any recommendations i would love to hear them!

Week 6 – Chicken Parmesan

This took about three hours from start to sit down – but it was really delicious – I’ve never made chicken this way (pounded thin with a mallet) and it is so deliciously tender – it earned 4 out of 5 stars so that’s always a good thing!

Week 5 – Meatball Sliders

Standard

This was a yummy recipe!  I went to an honest to God’s butcher shop to make sure i had the right kind and best quality i could have! much to my delight – the mean was a dollar less a pound there – so I was very happy about that!  The butcher shop reminded me of Alexander’s Market in Lincoln – which isnt even there any more – but i went to many times as a kid with my mom and grandma a few times too, i think!  I will definitely be shopping there (Humphrey’s Market) more often!

Week #4 – Drip Beef

Yesterday I made Drip Beef – it was very yummy! The recipe on her website tho, was different than the one i used – i used the one from her cookbook… but either way you try it – you wont be sorry 🙂 I will definitely make it again! I started with this DELICIOUS looking roast… salted and peppered

seared it on both sides, in 2 T of butter and 2 T of canola oil, added rosemary, and two cups of beef broth and one cup of water…then a small jar of pepperoncinis

then simmered it for 5 hours on low….

in the meantime – i decided to try out my new mandolin – so i sliced up about 4 potatoes and fried them up (also got the idea from PW – who else? lol)

I was pretty happy with the results.  And so was Wyatt 🙂  which is the most important factor – he gave it 4 out of 5 stars 🙂
